Mushroom pate

Here’s a delicious and creamy mushroom pâté recipe that’s perfect for spreading on crackers or bread:

Ingredients:

  • 2 cups mushrooms (such as cremini or button), finely chopped
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil or butter
  • 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
  • 1/4 cup cream cheese (or a vegan alternative)
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Optional: a splash of soy sauce or balsamic vinegar for added flavor

Instructions:

  1. Sauté the Vegetables:

    • In a skillet, heat the olive oil or butter over medium heat. Add the chopped onion and garlic, and sauté until softened, about 3-4 minutes.
  2. Add the Mushrooms:

    • Add the chopped mushrooms and thyme to the skillet. Cook until the mushrooms are browned and any liquid has evaporated, about 8-10 minutes. Season with salt and pepper.
  3. Blend the Mixture:

    • Remove the skillet from heat and let it cool slightly. Transfer the mushroom mixture to a food processor. Add the cream cheese and lemon juice (and soy sauce or balsamic vinegar if using). Blend until smooth and creamy.
  4. Adjust Seasoning:

    • Taste and adjust seasoning with more salt, pepper, or lemon juice if needed.
  5. Chill:

    • Transfer the pâté to a serving dish and refrigerate for at least 30 minutes to firm up.
  6. Serve:

    • Serve with crackers, toasted bread, or vegetable sticks.

Enjoy your mushroom pâté!
